Swiss Ham Pie
Pastry for 1-crust pie

2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/8 teaspoon ground nutmeg
1 1/2 cups milk

4 ounces process Swiss cheese, shredded (1 cup)
3 slightly beaten eggs
1 cup diced cooked ham
What to do:
Prepare pastry. Flatten ball on lightly floured surface. Roll from center to edge till dough is 1/8 inch thick. Fit pastry into a 9-inch pie plate; trim 1/2 to 1 inch beyond edge; fold under and flute.
In medium saucepan melt butter or margarine; blend in flour and nutmeg. Add milk all at once; cook and stir till thick and bubbly. Add cheese; stir till melted. Cool slightly; stir small amount of cheese sauce into eggs. Return egg mixture to cheese sauce; add ham. Pour into pastry shell.
Bake in moderate oven (375 degrees) for 25 to 30 minutes. Trim with slices of Swiss cheese cut into triangles, if desired. Let pie cool 10 minutes. Makes 6 servings.
